A great recipe for using up large quantities of onions. This marmalade pairs perfectly with cheese and can also be used as a topping for burgers or on a slice of bread. Recipe by Sarah-Vanessa, Velvet & Vinegar

Ingredients for three 500 g jars

  • 2 kg onions, a mix of brown and red
  • 100 ml maple syrup
  • 150 g date sugar or raw cane sugar
  • 100 ml light balsamic vinegar
  • 200 ml red wine vinegar or balsamic vinegar
  • 100 ml red wine
  • 3-4 bay leaves
  • 10 g salt
  • 1 tsp black peppercorns
  • 4-5 cloves
  • 1 tsp cinnamon

Instructions:

  1. Peel and thinly slice the onions.
  2. In a large saucepan, sauté the onions together with the maple syrup and date sugar for 8 to 10 minutes. Stir well to prevent the mixture from burning.
  3. Add the rest of the ingredients and mix well.
  4. Bring to a boil on medium heat, then reduce the heat.
  5. Simmer the marmalade on low heat until most of the liquid has cooked off. This will take anywhere from 30 to 50 minutes, depending on your stove.
  6. Have clean jars ready. Now sterilise them, either by placing them in an oven preheated to 200°Celsius for 10-15 minutes or submerging them in boiling water for 10 minutes.
  7. Ladle the hot onion marmalade into the sterilised jars. As you're doing so, remove the bay leaves. Seal the jars while still hot. Once opened, the marmalade will keep for one week. It can be stored for several weeks if kept sealed. If you want to be on the safe side, you should boil the jars. To do this, place the well-sealed jars in a large saucepan, fill with water until the jars are covered and then boil at 100°C for about 120 minutes. Allow the jars to cool completely and store in a dark place.

Note: You can season the marmalade however you like. Spices and/or mulled wine are a great choice during the holiday season.

How to use your onion marmalade

  • On burgers: Add all the toppings you want to your burgers and garnish with onion marmalade.
  • For a cheese platter: Pair some tasty baguette with vegan cheese and add a dollop of onion marmalade – simply delicious. Enjoy with a glass of good red wine.
  • With raclette: Garnish raclette cheese with onion marmalade and melt on a raclette grill.
  • For enhancing savoury dishes or sauces: Simply serve it with the dish or stir it into a sauce.
  • As a spread: Just serve it on a slice of bread.
  • As a gift: perfect for giving during Advent or at Christmas.
