Bring the fonio to a boil with the water and some salt and simmer for about 10 minutes until the fonio has thickened. Stir in the olive oil.

Line the baking tray with parchment paper and spread the fonio about 1.5 cm thick on it. Let cool.

Once cooled, spread tomato sauce on the fonio crust and distribute it not quite to the edge.

Top the pizza with the vegetables.

For the homemade cheese, mix vegan skyr with 1/2 tsp salt and 1 TBSP nutritional yeast and drop small dollops onto the pizza with a spoon. Alternatively, spread the vegan mozzarella.

Bake at 200 degrees for about 15–20 minutes.
