Peel the ginger - for example with the edge of a teaspoon.

Grate the peeled ginger finely.

Put ginger, sugar and water into a pot and heat. Stir everything until the sugar dissolves and let it come to a brief boil.

Remove the pot from the heat and let the mixture cool.

If you prefer a finer texture, you can pass the mixture through a sieve.

Pour the finished paste into clean jars and store in the refrigerator. For even longer shelf life, you can freeze the paste in portions in an ice cube tray.
