Preheat the oven to 200 degrees Celsius and line a baking sheet with parchment paper.

Cook the lentils for 5 minutes, drain and rinse under cold water.

Place the lentils, tomato paste, onions, carrots, garlic, ginger, coriander, salt, garam masala and oil into a blender and purée until well combined.

Add the oats and water and blend again until well combined. (Note: The more you blend, the smoother the cutlets will be; blend less for a coarser texture).

Divide the mixture into 6–10 equal portions. Rub your hands with oil and shape into patties.

Brush with olive oil and bake for 10 minutes.
7.
Flip the patties and bake for another 10 minutes.
8.
Remove from the oven and serve with dips or use in burgers.
