Preheat oven to 200°C. Slice carrots into approx. 3 mm thick slices and spread on a baking sheet. Drizzle with 2 tbsp olive oil, salt and pepper, and cook in the middle of the oven for about 20 minutes.

Mix shallots with the pressed juice in a bowl. Add the remaining oil and season with salt and pepper.

Slice the apple into 2 mm thick slices. On 4 large plates, alternately arrange apple and carrot slices. Cut dates lengthwise into pieces and distribute as well. Drizzle dressing over and finish by sprinkling with sesame seeds.
