Sterilize the jars: boil for 10 minutes in a large pot of hot water. Lift jars and lids out with tongs and place on a spread dish towel.

Wash the orange peels and remove any bits of pulp.

Place the peels and the salt water in a high-performance blender. First add 0.5 liter of water, then gradually add more until a thick liquid paste forms.

Fill the orange peel paste into the sterilized jars.

Cover the surface with a tablespoon of salt solution and weigh it down with a small weight that fits well into the jar opening, covers the surface, and leaves a few millimeters around for air exchange. Leave at room temperature for 2–3 weeks without the lid but with the weight.

Then seal with the screw lid and store in the refrigerator.
7.
White deposits may form on the surface; these are harmless and can simply be removed.
