Peel the ginger and cut into small pieces.

Simmer the ginger in boiling water for 30 minutes.

Drain the water, reserve it and reuse as desired – for example as tea or a ginger drink.

Return the ginger to the pot, cover with fresh water and add the sugar.

Cover the pot, reduce the heat and simmer for about one hour. Remove from the heat and let steep overnight.

Bring to a boil again the next day, reduce the heat and simmer for one hour.
7.
Puree the mixture or leave pieces whole depending on your preference for more texture.
8.
Fill into hot, sterilized jars and store in the refrigerator.
