Combine all ingredients up to and including the water in a bowl to form a moist dough. If the dough is too dry and the mixture does not hold together well, add a little more water.

Remove kale leaves from the stems and chop very finely. Alternatively, chop in a food cutter (process green and purple separately).

Divide the falafel mixture into two bowls. Put the purple kale in one bowl and the green kale in the other. Mix both well.

Form small falafel balls from the mixture.

Heat oil in a frying pan and fry the falafel on all sides until golden brown, enjoy immediately.
