Rub the quinces with a cloth. Then wash, peel, quarter, core, and cut the quinces into pieces.

Place the prepared quince pieces with the cinnamon sticks in a pot, cover with apple wine and water, bring to a boil and simmer over low heat until the pieces are soft. Toward the end, add erythritol and raw cane sugar to the pot.

Fill the quince pieces without the juice into prepared jars. Reduce the juice for another 2–3 minutes, then fill the jars with it. Close the jars and let them stand upside down for about 5 minutes.
