Our dried Smyrna figs come from the mountains of south-west Turkey. Six family farmers grow them there and gently dry the fruit in the sun. This traditional method of processing results in fruit with an intense flavour. They are neither sulphured nor sweetened with sugar.
We source these dried mountain figs through the Turkish organic pioneer OTS Organik. The company has been promoting organic farming in Turkey since 2009. OTS is one of the first external partners with whom we have implemented the gebana model.

- Sweet mountain figs aren’t just great as a snack; they can also be used as a sugar substitute in baking: chop them finely and use the same amount in place of sugar.

Storage & shelf life
Store the dried fruit in a dry, cool place away from light – ideally in a cool cellar. Alternatively, during the winter months, you can store dried figs on the balcony, protected from frost – for example, in a polystyrene box. The cold protects the dried fruit from pests such as food moths. The figs are still edible even if a white coating forms. This is simply fructose that has dried on the surface.
