This aromatic rice comes from the Dataganj region in the state of Uttar Pardesh in Northeast India. The family farmers who grow the rice do all processing by hand. They irrigate their fields strategically without having to rely on constant flooding.
Use & preparation
Preparation (basic recipe for 3-4 people):
Wash 1 cup of rice twice and put it in a saucepan. Add 1.5 times the amount of water and add some salt. Soak for 10 minutes, then bring to the boil. Immediately bring the heat down to medium, then let the rice simmer for about 10-12 minutes with the lid on.
