Fleur de Sel

Hand-harvested, fine sea salt of ‘Fleur de Sel’ quality from the Mesolongi Lagoon in western Greece. The lagoon is a protected wetland and a breeding ground for around 280 species of birds.
We source the Fleur de Sel through our long-standing partner Anyfion, in which we hold a 20 per cent stake and which primarily supplies us with citrus fruits. The salt is produced by the small-scale business Amphisalt.
Fleur de sel is milder than traditional sea salt and is therefore ideal for seasoning and garnishing a variety of dishes that benefit from a subtle hint of salt.
