Passion fruit: so versatile
Passion fruit marinade
Give your marinades an exotic kick with passion fruits. Ideal for marinating fish, chicken, or tofu.
Mix the pulp of 2–3 passion fruits, 1 tbsp olive oil, 1 tbsp soy sauce, some ginger, some lime juice, 1 tsp honey or maple syrup and, if desired, some chili in a bowl. Done!

Passion fruit ice
With passion fruits you can conjure up a very simple summer refreshment. Either as simple water ice or your own frozen yogurt.
Passion fruit water ice: Fill ice molds with pulp (about 2 passion fruits per mold), a little water and syrup of your choice to sweeten. Freeze until solid.
Frozen yogurt with passion fruit: Pass the pulp of about 4 passion fruits through a sieve to collect the juice, mix the juice with sweetened natural yogurt, fill into ice molds and freeze.

Passion fruit layered dessert
You can also create simple desserts with passion fruits.
Layer the pulp of 1–2 passion fruits and sweetened natural yogurt alternately. Dried coconut or a few chopped nuts make a crunchy topping.
The slightly more sophisticated version: passion fruit tiramisu. Layer 100 g ladyfingers dipped in orange juice, about 900 g mascarpone cream (sweeten and whip with 100 g sugar and one packet of vanilla sugar) and the pulp of 10 passion fruits in a dish of about 2 liters.
Start with half of the ladyfingers dipped in orange juice and place them in the dish. Spread half of the mascarpone cream over them. Then dip the remaining ladyfingers in orange juice and arrange them over the mascarpone cream. Spread the remaining mascarpone cream on top and finish with the passion fruit pulp as the top layer.
Passion fruit vinaigrette
This vinaigrette tastes great not only on leaf salads but also on fruit salad, quinoa salad or drizzled over a cheese board!
Pass the pulp of 6 passion fruits through a sieve to collect the juice and mix the juice with 1/2 cup extra virgin olive oil, 2–3 tbsp white wine vinegar, 2 tbsp honey, pepper & salt to taste – put everything in a blender and blend well.
The vinaigrette can be seasoned to taste with peanut butter or tahini.

Aperitif drinks with passion fruit
Passion fruits are ideal for drinks – with or without alcohol.
Basic (makes about 4 drinks): Fill glasses with some crushed ice, distribute the pulp of 2 passion fruits, 1 dl pineapple juice and 1 dl carbonated mineral water among the glasses. Then distribute 1.2 dl blackcurrant syrup over the 4 drinks, pouring it carefully over a spoon.
Prosecco version: For the basic recipe, rub a few mint leaves between your hands and add them, then pour 4 dl Prosecco into the 4 glasses before adding the syrup.
Tequila cocktail: For the basic recipe, pour 1 dl tequila into the glasses before the syrup and add a lime wedge to each glass.
Passion fruit chutney
If you want to preserve your passion fruits for longer, they are perfect for conserving in a chutney.
Cook the pulp of 5 passion fruits with 2 tbsp sugar and 1 tbsp balsamic for about 15 minutes until syrupy. Finely chop the zest of half a lime and half a chili pepper and add if desired; add more sugar if needed.
Pour the hot chutney into a screw-top jar, close, turn upside down and let cool.
Simply for snacking
The simplest way to enjoy passion fruits: simply cut open and scoop out with a spoon or drink with a straw. Ideal for in between or to go!
