Preheat the oven to 170°C (top/bottom heat).

Mix all ingredients except the salt in a bowl and spread evenly on a baking tray lined with parchment paper. Sprinkle with salt and roast for about 10–15 minutes, stirring occasionally. Make sure the nuts do not burn. Remove from the oven and let cool.

The roasted nuts can be stored in a jar for at least two weeks. They taste great on their own but also wonderful on a crunchy salad or roasted vegetables.
