Wash the fonio, soak it for 5 minutes in a bowl with warm water, then drain.

Put the soaked fonio, the water, the milk and the erythritol or sugar into a heavy-bottomed pot. Stir in the cinnamon, cardamom, nutmeg and vanilla (optional).

Cook over medium-high heat for 8 to 10 minutes, stirring constantly. You can add another 50–100 ml of milk if you prefer it slightly more fluid.

Spoon the porridge into a bowl and garnish with cacao nibs and orange!
