Day 1: The raw hazelnuts are heated in a steam boiler to render the caustic oil in the shell harmless. After heating, the nuts are cooled overnight.
Day 2: With a special cashew nut cracker, the raw shells are cracked by hand. A sharp blade cuts the shell, which is millimeter work: if the blade penetrates too deeply, it damages the kernel. Most kernels then still have to be removed from the shell by hand with a knife. The cashew kernel is covered by a thin skin. To remove this, the nuts are first dried, then heated with a thermal shock and moistened, and finally laid out to dry again.
3rd day: Following the procedure of the previous day, the skin can be peeled off by hand. Now the nuts are cleaned one final time carefully with a knife.
Day 4: The whole and broken kernels are sorted by size, shape and color and assigned to up to 26 different categories.
Day 5: The cashews are weighed and vacuum-packed to preserve them.
