Banana Chips
Togo
Salted crisps made from fried plantains. The fruit comes from some Togolese family farmers who also supply us with cocoa for our chocolate. They grow the plantains as part of dynamic agroforestry in the area surrounding the town of Kpalimé in the Plateaux region. The bananas provide the families with an additional income when it is not cocoa season. They also use the leaves of the banana plants to ferment their cocoa and keep the soil around the cocoa trees moist.
Storage & shelf life
Once opened, store the chips in an airtight container. This will keep them crispy and preserve their flavour.

ABRA DJAGBE
FARMER FROM DZOGBEPEME, TOGO
The best part about farming is seeing the ripe produce after the harvest.
"It would be best not to grow old at all," says Abra Djagbe, laughing. But she knows it's impossible. "A balanced diet is much more important for improving my health." The farmer cultivates a mixed plot of cocoa, plantains, maize and beans. She relies on these crops to feed her family – her husband, his concubine and four children. "My grandparents already used organic methods," explains the farmer. "It's my duty to leave the soil in the same good condition for my children, just as my grandparents did for me."
