The coconuts for these flakes are grown in the tropical forests of Ghana. Workers from small cooperatives collect them as they fall on the ground. The coconuts are then processed by hand and dried at a production plant near the town of Adeiso.
Store the coconut strips in a tightly closed container in the fridge. Due to their high fat content, they only have a limited shelf life at room temperature. Make sure that the container is as airtight as possible to prevent moisture from reaching the strips. You can also freeze them, which will extend their shelf life by several months.
